Ingredients
- 300g wholewheat linguine
- 300g raw king prawns
- 2 courgettes, peeled into ribbons
- 4 garlic cloves, sliced
- 1 red chilli, sliced
- 100ml white wine
- Juice of 1 lemon
- 3 tbsp olive oil
- Fresh parsley, salt, pepper
Method
- Cook linguine; reserve 100ml pasta water.
- Fry garlic and chilli in oil 1 min; add prawns and cook 2–3 min until pink.
- Add wine; reduce 1 min. Add courgette ribbons, lemon juice and pasta water.
- Toss in linguine; season generously. Scatter parsley.
