Prawn & Courgette Linguine

Light linguine with king prawns, courgette ribbons, chilli and garlic in a lemon white wine sauce.

Prawn & Courgette Linguine

Ingredients

  • 300g wholewheat linguine
  • 300g raw king prawns
  • 2 courgettes, peeled into ribbons
  • 4 garlic cloves, sliced
  • 1 red chilli, sliced
  • 100ml white wine
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • Fresh parsley, salt, pepper

Method

  1. Cook linguine; reserve 100ml pasta water.
  2. Fry garlic and chilli in oil 1 min; add prawns and cook 2–3 min until pink.
  3. Add wine; reduce 1 min. Add courgette ribbons, lemon juice and pasta water.
  4. Toss in linguine; season generously. Scatter parsley.
