Prawn & Mango Salad

Prawn & Mango Salad

Ingredients

  • 200g cooked king prawns
  • 1 ripe mango, diced
  • ½ red chilli, finely sliced
  • Juice of 1 lime
  • Handful of coriander
  • Mixed salad leaves
  • 1 tbsp fish sauce

Method

  1. Arrange salad leaves on a plate.
  2. Toss prawns with lime juice, fish sauce and chilli.
  3. Spoon prawns over the leaves.
  4. Scatter mango and fresh coriander on top.
  5. Serve immediately.
