Ingredients
- 300g raw king prawns
- 2 sweet potatoes, cubed
- 1 tin coconut milk
- 2 tbsp red curry paste
- 1 onion, diced
- 2 garlic cloves
- 1 tbsp fish sauce
- Juice of 1 lime
- Fresh coriander
- Cooked jasmine rice to serve
Method
- Soften onion in oil, add garlic and curry paste, cook 2 minutes.
- Add sweet potato and coconut milk, simmer 15 minutes until tender.
- Add prawns and fish sauce, cook 3–4 minutes until pink.
- Squeeze in lime juice and scatter coriander.
- Serve over jasmine rice.
