Prawn & Sweet Potato Curry

A rich, warming coconut curry that's dairy-free and ready in 30 minutes.

Prawn & Sweet Potato Curry

Ingredients

  • 300g raw king prawns
  • 2 sweet potatoes, cubed
  • 1 tin coconut milk
  • 2 tbsp red curry paste
  • 1 onion, diced
  • 2 garlic cloves
  • 1 tbsp fish sauce
  • Juice of 1 lime
  • Fresh coriander
  • Cooked jasmine rice to serve

Method

  1. Soften onion in oil, add garlic and curry paste, cook 2 minutes.
  2. Add sweet potato and coconut milk, simmer 15 minutes until tender.
  3. Add prawns and fish sauce, cook 3–4 minutes until pink.
  4. Squeeze in lime juice and scatter coriander.
  5. Serve over jasmine rice.
