Ingredients
- 300g raw king prawns
- 2 sweet potatoes, cubed
- 1 tin chopped tomatoes
- 1 red pepper, diced
- 1 onion, diced
- 2 garlic cloves
- 1 tsp smoked paprika
- 1 tsp cayenne pepper
- 500ml fish stock
- Fresh coriander
- 1 tbsp olive oil
Method
- Soften onion and pepper in oil. Add garlic, paprika and cayenne.
- Add sweet potato, tomatoes and stock. Simmer 20 minutes.
- Add prawns and cook 3–4 minutes until pink.
- Season and stir in fresh coriander.
- Serve with crusty bread or over rice.
