Prawn & Sweet Potato Stew

A West African-inspired stew with deep, warming spices and succulent prawns.

Prawn & Sweet Potato Stew

Ingredients

  • 300g raw king prawns
  • 2 sweet potatoes, cubed
  • 1 tin chopped tomatoes
  • 1 red pepper, diced
  • 1 onion, diced
  • 2 garlic cloves
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 500ml fish stock
  • Fresh coriander
  • 1 tbsp olive oil

Method

  1. Soften onion and pepper in oil. Add garlic, paprika and cayenne.
  2. Add sweet potato, tomatoes and stock. Simmer 20 minutes.
  3. Add prawns and cook 3–4 minutes until pink.
  4. Season and stir in fresh coriander.
  5. Serve with crusty bread or over rice.
