Ingredients
- 4 preserved lemons (rinds only — discard pulp)
- 2 tbsp olive oil
- 1 garlic clove
- 1 tsp ground cumin
- Salt to taste
Method
- Blend all ingredients until a smooth paste.
- Store in a small jar, covered with olive oil, in the fridge up to 1 month.
Tips
Use ½ tsp at a time — very intense. Stir into dressings, marinades, hummus, fish dishes and roasted vegetables. A little goes a very long way.
