Preserved Lemon Paste

Intensely flavoured preserved lemon paste — a shortcut to the complex umami of Moroccan cooking.

Preserved Lemon Paste

Ingredients

  • 4 preserved lemons (rinds only — discard pulp)
  • 2 tbsp olive oil
  • 1 garlic clove
  • 1 tsp ground cumin
  • Salt to taste

Method

  1. Blend all ingredients until a smooth paste.
  2. Store in a small jar, covered with olive oil, in the fridge up to 1 month.

Tips

Use ½ tsp at a time — very intense. Stir into dressings, marinades, hummus, fish dishes and roasted vegetables. A little goes a very long way.
