Ingredients
- 4 medium sweet potatoes
- 2 chicken breasts, poached and shredded
- 2 tbsp sriracha sauce
- 1 tbsp honey
- Slaw: 150g white cabbage shredded, 2 carrots grated, 4 tbsp Greek yogurt, 1 tbsp apple cider vinegar, salt
Method
- Bake sweet potatoes at 200°C for 50–60 min until soft.
- Mix chicken with sriracha and honey; warm in a pan.
- Combine slaw ingredients.
- Split potatoes; fill with pulled chicken and top with slaw.
