Ras el Hanout

Morocco's most complex spice blend — no two recipes are the same, but all are magnificent.

Ras el Hanout

Ingredients

  • 2 tsp cumin
  • 2 tsp ginger
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • 1 tsp paprika
  • ½ tsp coriander
  • ½ tsp allspice
  • ½ tsp cayenne
  • ¼ tsp cloves
  • ¼ tsp cardamom
  • ¼ tsp nutmeg
  • ¼ tsp black pepper

Method

  1. Combine all spices in a bowl.
  2. Mix thoroughly until completely uniform.
  3. Transfer to a small glass jar with a tight seal.
  4. Use in tagines, lamb dishes, roasted vegetables and couscous.
  5. Store in a cool, dark place for up to 6 months.
