Rice Cakes with Avocado

Rice Cakes with Avocado

Ingredients

  • 4 plain rice cakes
  • 1 ripe avocado
  • Juice of ½ lemon
  • Pinch of chilli flakes
  • Sea salt and black pepper
  • Optional: sliced radish or cucumber

Method

  1. Mash avocado with lemon juice, salt and pepper.
  2. Spread generously over each rice cake.
  3. Top with chilli flakes and optional extras.
  4. Eat immediately before the rice cake softens.
