Roasted Plums with Cardamom Yogurt

Ingredients

  • 8 ripe plums, halved and stoned
  • 2 tbsp honey
  • ½ tsp ground cardamom
  • 300g Greek yogurt
  • 1 tsp vanilla extract
  • 30g pistachios, roughly chopped

Method

  1. Preheat oven to 190°C.
  2. Place plums cut-side up on a baking tray; drizzle with honey.
  3. Roast 20–25 min until softened and slightly caramelised.
  4. Stir cardamom and vanilla into yogurt.
  5. Serve plums warm over cardamom yogurt; scatter pistachios.
