Omega-3-packed sardines on toasted sourdough with roasted cherry tomatoes.

Sardine & Tomato Toast

Ingredients

  • 1 tin sardines in olive oil
  • 2 slices sourdough bread
  • 150g cherry tomatoes, halved
  • 1 garlic clove
  • 1 tsp red wine vinegar
  • Fresh parsley
  • Salt, chilli flakes

Method

  1. Roast tomatoes at 200°C for 12 min with a little oil and salt.
  2. Toast bread and rub with garlic.
  3. Top with sardines (broken up), roasted tomatoes and vinegar.
  4. Scatter parsley and chilli flakes.
