Ingredients
- 200g soba noodles, cooked and cooled
- 150g edamame (shelled)
- 1 cucumber, julienned
- 2 carrots, julienned
- Dressing: 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp rice vinegar, 1 tsp grated ginger, 1 tsp honey
- Sesame seeds, spring onion to serve
Method
- Whisk dressing ingredients together.
- Toss noodles with dressing, edamame, cucumber and carrot.
- Serve cold topped with sesame seeds and spring onion.
