Ingredients
- 120g smoked salmon
- 1 large avocado, sliced
- ½ cucumber, ribboned with a peeler
- 80g watercress or mixed leaves
- 1 tbsp capers
- ¼ red onion, very thinly sliced
- Zest and juice of 1 lemon
- 2 tbsp extra-virgin olive oil
- 1 tsp Dijon mustard
- Fresh dill, to garnish
Method
- Whisk lemon juice and zest, olive oil and mustard together. Season with pepper (no salt needed — salmon is salty).
- Arrange watercress on a platter. Scatter over cucumber ribbons and red onion.
- Lay salmon and avocado slices over the top.
- Scatter over capers and dill. Drizzle with dressing and serve immediately.
Tips
This works beautifully as a starter for a dinner party. For more substance, add a handful of cooked puy lentils.
