Smoked Salmon & Avocado Salad

Elegant and effortless — silky smoked salmon with creamy avocado, cucumber and a zingy lemon dressing.

Smoked Salmon & Avocado Salad

Ingredients

  • 120g smoked salmon
  • 1 large avocado, sliced
  • ½ cucumber, ribboned with a peeler
  • 80g watercress or mixed leaves
  • 1 tbsp capers
  • ¼ red onion, very thinly sliced
  • Zest and juice of 1 lemon
  • 2 tbsp extra-virgin olive oil
  • 1 tsp Dijon mustard
  • Fresh dill, to garnish

Method

  1. Whisk lemon juice and zest, olive oil and mustard together. Season with pepper (no salt needed — salmon is salty).
  2. Arrange watercress on a platter. Scatter over cucumber ribbons and red onion.
  3. Lay salmon and avocado slices over the top.
  4. Scatter over capers and dill. Drizzle with dressing and serve immediately.

Tips

This works beautifully as a starter for a dinner party. For more substance, add a handful of cooked puy lentils.
