Ingredients
- 4 plain rice cakes
- 100g smoked salmon
- 4 tbsp light cream cheese or labneh
- ½ cucumber, thinly sliced
- 1 tsp capers
- Fresh dill
- Lemon wedges to serve
Method
- Spread each rice cake with cream cheese.
- Layer cucumber slices, then smoked salmon.
- Top with capers and dill; serve with a squeeze of lemon.
