Spelt Banana Bread

Moist wholegrain banana bread made with spelt flour, naturally sweetened with ripe bananas.

Spelt Banana Bread

Ingredients

  • 3 very ripe bananas
  • 200g wholegrain spelt flour
  • 2 eggs
  • 3 tbsp coconut oil, melted
  • 2 tbsp honey
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 50g walnuts, chopped
  • Pinch of salt

Method

  1. Preheat oven to 175°C. Line a loaf tin.
  2. Mash bananas; beat in eggs, coconut oil and honey.
  3. Fold in flour, baking powder, cinnamon and salt. Stir in walnuts.
  4. Pour into tin; bake 45–50 min until a skewer comes out clean.
  5. Cool before slicing.
