Ingredients
- 3 very ripe bananas
- 200g wholegrain spelt flour
- 2 eggs
- 3 tbsp coconut oil, melted
- 2 tbsp honey
- 1 tsp baking powder
- 1 tsp cinnamon
- 50g walnuts, chopped
- Pinch of salt
Method
- Preheat oven to 175°C. Line a loaf tin.
- Mash bananas; beat in eggs, coconut oil and honey.
- Fold in flour, baking powder, cinnamon and salt. Stir in walnuts.
- Pour into tin; bake 45–50 min until a skewer comes out clean.
- Cool before slicing.
