Ingredients
- 500g lamb mince
- 1 onion, finely diced
- 3 garlic cloves, minced
- 1 tsp grated ginger
- 1 tsp cumin, 1 tsp garam masala, ½ tsp chilli powder
- 200g baby spinach
- 2 tomatoes, diced
- 1 tbsp coconut oil
- Brown rice and yogurt to serve
Method
- Brown lamb in coconut oil; drain any excess fat.
- Add onion, garlic and ginger; fry 3 min. Add spices and tomatoes; cook 5 min.
- Stir in spinach until wilted; season.
- Serve over brown rice with a spoonful of cooling yogurt.
