Spiced Lentil Breakfast Patties

Ingredients

  • 200g cooked red lentils
  • 1 small onion, grated
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 2 tbsp oat flour
  • Salt, pepper
  • 2 tbsp olive oil
  • Yogurt and chutney to serve

Method

  1. Mash lentils roughly; mix in onion, garlic, spices, oat flour, salt and pepper.
  2. Shape into 8 small patties.
  3. Fry in olive oil over medium heat 3–4 min per side until crisp and golden.
  4. Serve with yogurt and mango chutney.
