Ingredients
- 400g tin chickpeas, drained
- 100g baby spinach
- 1 tsp cumin, 1 tsp paprika
- 1 garlic clove, minced
- 1 tbsp olive oil
- 4 tbsp tzatziki (or coconut yogurt)
- 4 wholegrain wraps
- Squeeze of lemon
Method
- Fry garlic in oil 1 min; add chickpeas and spices, cook 4 min.
- Add spinach and wilt. Squeeze over lemon; season.
- Spread tzatziki on wraps; add chickpea mixture and roll.
