Spinach & Chickpea Wrap

Spiced chickpeas and wilted spinach in a wholegrain wrap with tzatziki — high protein and vegan.

Spinach & Chickpea Wrap

Ingredients

  • 400g tin chickpeas, drained
  • 100g baby spinach
  • 1 tsp cumin, 1 tsp paprika
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 4 tbsp tzatziki (or coconut yogurt)
  • 4 wholegrain wraps
  • Squeeze of lemon

Method

  1. Fry garlic in oil 1 min; add chickpeas and spices, cook 4 min.
  2. Add spinach and wilt. Squeeze over lemon; season.
  3. Spread tzatziki on wraps; add chickpea mixture and roll.
