Spinach & Feta Omelette

Spinach & Feta Omelette

Ingredients

  • 3 large eggs
  • Handful of baby spinach
  • 40g feta cheese, crumbled
  • 1 small shallot, finely diced
  • 1 tsp olive oil
  • Salt and pepper

Method

  1. Whisk eggs with a pinch of salt and pepper.
  2. Heat olive oil in a non-stick pan over medium heat.
  3. Soften the shallot for 2 minutes, then add spinach and wilt for 1 minute.
  4. Pour in the eggs, tilting the pan to spread evenly.
  5. Scatter feta over one half, fold and slide onto a plate.
