Ingredients
- 3 large eggs
- Handful of baby spinach
- 40g feta cheese, crumbled
- 1 small shallot, finely diced
- 1 tsp olive oil
- Salt and pepper
Method
- Whisk eggs with a pinch of salt and pepper.
- Heat olive oil in a non-stick pan over medium heat.
- Soften the shallot for 2 minutes, then add spinach and wilt for 1 minute.
- Pour in the eggs, tilting the pan to spread evenly.
- Scatter feta over one half, fold and slide onto a plate.
