Ingredients
- 4 large bell peppers
- 250g turkey mince
- 150g cooked quinoa
- 1 tin chopped tomatoes
- 1 onion, diced
- 2 garlic cloves
- 1 tsp cumin
- 50g grated mozzarella
- Salt and pepper
Method
- Preheat oven to 190°C. Slice tops off peppers and scoop out seeds.
- Brown turkey and onion, add garlic and cumin.
- Stir in tomatoes and quinoa, season well.
- Fill each pepper with the mixture and top with mozzarella.
- Stand in a baking dish with a little water in the base. Bake 35 minutes.
