Stuffed Bell Peppers

Vibrant pepper shells filled with a herby, protein-rich quinoa and turkey mixture.

Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 250g turkey mince
  • 150g cooked quinoa
  • 1 tin chopped tomatoes
  • 1 onion, diced
  • 2 garlic cloves
  • 1 tsp cumin
  • 50g grated mozzarella
  • Salt and pepper

Method

  1. Preheat oven to 190°C. Slice tops off peppers and scoop out seeds.
  2. Brown turkey and onion, add garlic and cumin.
  3. Stir in tomatoes and quinoa, season well.
  4. Fill each pepper with the mixture and top with mozzarella.
  5. Stand in a baking dish with a little water in the base. Bake 35 minutes.
