Ingredients
- 300g sirloin steak
- 1 cucumber, halved and sliced
- 200g cherry tomatoes, halved
- 1 red chilli, finely sliced
- Large bunch Thai basil, mint and coriander
- Dressing: 3 tbsp fish sauce, 2 tbsp lime juice, 1 tbsp palm or brown sugar, 1 garlic clove grated
- 60g roasted peanuts
Method
- Season and griddle steak 3 min per side for medium-rare; rest 5 min, then slice thinly.
- Whisk dressing ingredients.
- Toss beef, cucumber, tomatoes, chilli and herbs with dressing.
- Scatter peanuts and serve immediately.
