Thai Beef Salad

Zingy Thai-style salad with grilled sirloin, fresh herbs, cucumber and a fish sauce dressing.

Thai Beef Salad

Ingredients

  • 300g sirloin steak
  • 1 cucumber, halved and sliced
  • 200g cherry tomatoes, halved
  • 1 red chilli, finely sliced
  • Large bunch Thai basil, mint and coriander
  • Dressing: 3 tbsp fish sauce, 2 tbsp lime juice, 1 tbsp palm or brown sugar, 1 garlic clove grated
  • 60g roasted peanuts

Method

  1. Season and griddle steak 3 min per side for medium-rare; rest 5 min, then slice thinly.
  2. Whisk dressing ingredients.
  3. Toss beef, cucumber, tomatoes, chilli and herbs with dressing.
  4. Scatter peanuts and serve immediately.
