Ingredients
- 400g firm tofu, cubed and pressed
- 400ml coconut milk
- 2 tbsp green curry paste
- 200g mangetout
- 200g pak choi
- 200ml vegetable stock
- 1 tbsp soy sauce
- 1 tbsp coconut oil
- Thai basil, lime to serve
- Jasmine rice to serve
Method
- Fry tofu until golden; remove. Fry curry paste in coconut oil 2 min.
- Add coconut milk and stock; simmer 5 min.
- Add mangetout, pak choi and soy sauce; cook 3 min.
- Return tofu; serve over rice with basil and lime.
