Tofu & Vegetable Green Curry

Thai green curry with crispy tofu, pak choi and mangetout in a fragrant coconut broth.

Tofu & Vegetable Green Curry

Ingredients

  • 400g firm tofu, cubed and pressed
  • 400ml coconut milk
  • 2 tbsp green curry paste
  • 200g mangetout
  • 200g pak choi
  • 200ml vegetable stock
  • 1 tbsp soy sauce
  • 1 tbsp coconut oil
  • Thai basil, lime to serve
  • Jasmine rice to serve

Method

  1. Fry tofu until golden; remove. Fry curry paste in coconut oil 2 min.
  2. Add coconut milk and stock; simmer 5 min.
  3. Add mangetout, pak choi and soy sauce; cook 3 min.
  4. Return tofu; serve over rice with basil and lime.
