Ingredients
- 400g turkey mince
- 1 egg
- 2 tbsp breadcrumbs
- 1 tsp Italian seasoning
- 400g tin chopped tomatoes
- 2 courgettes, spiralised
- 1 garlic clove
- Fresh basil
- Parmesan to serve
Method
- Mix turkey, egg, breadcrumbs and Italian seasoning. Roll into 16 balls.
- Brown meatballs in olive oil all over, then set aside.
- Fry garlic briefly, add tomatoes and simmer 10 minutes.
- Return meatballs to the sauce, cook 10 more minutes.
- Serve over raw or lightly sautéed courgette noodles with Parmesan.
