Ingredients
- 4 eggs
- 1 tsp ground turmeric
- ¼ tsp black pepper
- 1 tbsp butter or ghee
- 2 slices rye bread, toasted
- Small bunch of chives, chopped
- Salt to taste
Method
- Whisk eggs with turmeric, black pepper and a pinch of salt.
- Melt butter in a pan over low heat; add eggs and stir gently until just set.
- Pile onto toasted rye and scatter with chives.
Tips
Black pepper activates curcumin in turmeric — don't skip it. Add a pinch of cayenne for extra heat.
