Turmeric Scrambled Eggs on Rye

Ingredients

  • 4 eggs
  • 1 tsp ground turmeric
  • ¼ tsp black pepper
  • 1 tbsp butter or ghee
  • 2 slices rye bread, toasted
  • Small bunch of chives, chopped
  • Salt to taste

Method

  1. Whisk eggs with turmeric, black pepper and a pinch of salt.
  2. Melt butter in a pan over low heat; add eggs and stir gently until just set.
  3. Pile onto toasted rye and scatter with chives.

Tips

Black pepper activates curcumin in turmeric — don't skip it. Add a pinch of cayenne for extra heat.
