Ingredients
- 200g flat rice noodles, soaked
- 250g firm tofu, cubed
- 100g bean sprouts
- 3 spring onions
- 2 garlic cloves
- Sauce: 3 tbsp tamarind paste, 2 tbsp soy sauce, 1 tbsp maple syrup
- Rapeseed oil
- Crushed peanuts, lime, coriander to serve
Method
- Mix sauce ingredients.
- Fry tofu in oil until golden; remove.
- Stir-fry garlic and spring onion 1 min; add noodles and sauce.
- Toss over high heat 2 min; add tofu and bean sprouts.
- Serve with peanuts, lime and coriander.
