Vegan Pad Thai

Classic Pad Thai made plant-based with tofu, rice noodles, bean sprouts and a tamarind sauce.

Vegan Pad Thai

Ingredients

  • 200g flat rice noodles, soaked
  • 250g firm tofu, cubed
  • 100g bean sprouts
  • 3 spring onions
  • 2 garlic cloves
  • Sauce: 3 tbsp tamarind paste, 2 tbsp soy sauce, 1 tbsp maple syrup
  • Rapeseed oil
  • Crushed peanuts, lime, coriander to serve

Method

  1. Mix sauce ingredients.
  2. Fry tofu in oil until golden; remove.
  3. Stir-fry garlic and spring onion 1 min; add noodles and sauce.
  4. Toss over high heat 2 min; add tofu and bean sprouts.
  5. Serve with peanuts, lime and coriander.
