Ingredients
- 300g rolled oats
- 100g walnuts, roughly chopped
- 80g Medjool dates, pitted and chopped
- 3 tbsp coconut oil, melted
- 3 tbsp maple syrup
- 1 tsp cinnamon
- ½ tsp cardamom
- Pinch of salt
Method
- Preheat oven to 170°C. Line a baking tray.
- Mix oats, walnuts, coconut oil, maple syrup, spices and salt.
- Spread on tray; bake 25–30 min, stirring halfway, until golden.
- Add dates once cooled; store in an airtight jar for up to 3 weeks.
