Crunchy homemade granola with walnuts, dates and a hint of cardamom — no refined sugar.

Walnut & Date Granola

Ingredients

  • 300g rolled oats
  • 100g walnuts, roughly chopped
  • 80g Medjool dates, pitted and chopped
  • 3 tbsp coconut oil, melted
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • ½ tsp cardamom
  • Pinch of salt

Method

  1. Preheat oven to 170°C. Line a baking tray.
  2. Mix oats, walnuts, coconut oil, maple syrup, spices and salt.
  3. Spread on tray; bake 25–30 min, stirring halfway, until golden.
  4. Add dates once cooled; store in an airtight jar for up to 3 weeks.
