Ingredients
- 600g watermelon, cubed
- 150g feta cheese, crumbled
- Small bunch fresh mint
- Handful of rocket
- 2 tbsp extra-virgin olive oil
- Juice of 1 lime
- Pinch of chilli flakes
Method
- Arrange watermelon and rocket on a large platter.
- Scatter feta and fresh mint leaves over the top.
- Drizzle with olive oil and lime juice.
- Finish with a pinch of chilli flakes.
- Serve immediately — this one doesn't sit well.
