Watermelon Granita

Icy, refreshing watermelon granita with lime and mint — the lightest summer dessert.

Watermelon Granita

Ingredients

  • 1 kg seedless watermelon, flesh only
  • Juice of 2 limes
  • 2 tbsp honey
  • Small bunch fresh mint

Method

  1. Blend watermelon with lime juice and honey until smooth.
  2. Pour into a wide shallow dish; freeze 1 hour.
  3. Scrape with a fork to break up ice crystals; freeze 1 more hour.
  4. Repeat scraping until granita is fluffy and icy. Serve in chilled glasses with mint.
