White Bean & Rosemary Dip

Ingredients

  • 400g tin cannellini beans, drained
  • 2 garlic cloves, minced
  • 2 sprigs fresh rosemary, leaves stripped
  • 3 tbsp extra virgin olive oil
  • Juice of ½ lemon
  • Salt, pepper
  • Crackers or veggie sticks to serve

Method

  1. Fry garlic and rosemary in 1 tbsp oil 1 min until fragrant.
  2. Blend beans with remaining oil, lemon juice, garlic and rosemary until smooth.
  3. Season; drizzle with more olive oil and a sprig of rosemary.
