Egg Fried Cauliflower Rice

Ingredients

  • 1 small head cauliflower, grated
  • 3 eggs, beaten
  • 1 cup frozen peas
  • 3 spring onions, sliced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 garlic clove, minced
  • 1 tsp grated ginger

Method

  1. Heat oil in a large wok over high heat. Fry garlic and ginger for 30 seconds.
  2. Add cauliflower rice and stir-fry for 4 minutes.
  3. Push to the side, pour in eggs and scramble.
  4. Mix everything together with peas and spring onions.
  5. Add soy sauce and sesame oil, toss and serve.
