Ingredients
- 1 small head cauliflower, grated
- 3 eggs, beaten
- 1 cup frozen peas
- 3 spring onions, sliced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 garlic clove, minced
- 1 tsp grated ginger
Method
- Heat oil in a large wok over high heat. Fry garlic and ginger for 30 seconds.
- Add cauliflower rice and stir-fry for 4 minutes.
- Push to the side, pour in eggs and scramble.
- Mix everything together with peas and spring onions.
- Add soy sauce and sesame oil, toss and serve.
