Ingredients
- 1 large wholemeal tortilla
- 150g roasted sweet potato, cubed
- 1 tin black beans, drained
- 50g grated cheddar
- 2 tbsp salsa
- 1 tbsp soured cream
- Handful of spinach
Method
- Warm the tortilla in a dry pan for 30 seconds each side.
- Layer spinach, sweet potato and black beans in the centre.
- Sprinkle over cheddar and add a spoonful of salsa.
- Fold in sides, roll tightly and cut in half.
- Serve with soured cream on the side.
