Sweet Potato & Black Bean Burrito

A filling plant-based burrito packed with fibre and slow-release carbs.

Sweet Potato & Black Bean Burrito

Ingredients

  • 1 large wholemeal tortilla
  • 150g roasted sweet potato, cubed
  • 1 tin black beans, drained
  • 50g grated cheddar
  • 2 tbsp salsa
  • 1 tbsp soured cream
  • Handful of spinach

Method

  1. Warm the tortilla in a dry pan for 30 seconds each side.
  2. Layer spinach, sweet potato and black beans in the centre.
  3. Sprinkle over cheddar and add a spoonful of salsa.
  4. Fold in sides, roll tightly and cut in half.
  5. Serve with soured cream on the side.
